Sweet Corn Fritters | How to make Sweet Corn Fritters

For the second day of Fritters, I am making the American version of Corn Fritters. Indian version of fritters is mostly made with Gram flour or Besan and is not sticky. Whereas this version, since I do not use eggs, tends to be little on the sticky side. Also on cooling, it will also become chewy or hard, depending on the consistency and frying.

Though I do not recommend burning yourself as you pop a hot fritter into your mouth, do take care to eat as soon as its manageable. This is not something you can make ahead and keep nor serve later. This is eat as you cook dishes.

Even though Chinnu loves corn, he refused to eat the fritters. So it was Konda who enjoyed it completely. Not to mention yours truly as well! This is one of my favorite theme. Not that I wait for a chance to make fritters, in general, I am now treading more towards avoiding it. Please do not be under the misconception of diet or healthy, its purely being lazy! If somebody makes for me, then I am all for it.

Sweet Corn Fritters

Ingredients Needed:

Fresh Sweet Corn / Canned Cob - 2 cups
All purpose flour -1  cup
Yellow Cornflour/ cornmeal - 2 tbsp
Salt to taste
Baking powder a pinch
Pepper powder
Milk as required to make the batter
Oil for deep frying.

How to make the Sweet corn Fritters

I used boiled vacuum packed corn cob.

Using a sharp knife, shave the corn kernels off the cob.

Wash and take that in a mixing bowl, add the flours, salt, pepper, baking powder. Combine everything well.

Then slowly add the milk to get a dropping consistency.

Heat a pan of oil, once hot, using a spoon, drop in small spoonful of batter into the hot oil.

Let it brown well, while the flame is low. Do not crowd the pan, and fry in batches on both sides.

Drain using a slotted spoon on to a kitchen towel.

Serve immediately with a dip.

Notes:

All purpose flour and milk will make this sticky, so you got to use two spoons to drop in the batter.

Cook on low flame to cook through the fritters.

Eat right away, else it will become hard.
