Sweet Wheat Banana Dosa ~ 101 Dosa Varieties!

If you have been regular on this blog, then you must know of my passion for Dosas. There is nothing more I would want if there is dosa for me. So much when I thought of my first Mela, it was Dosa Mela. The response was so much that the Mela series have come a long way.

When my colleagues wanted me to make dosas for them, they checked out my Dosa Mela and said I must select from the list. They were so eager to select so many dosas, however we scaled down to four varieties, and of course we had to decide on the chutneys as well.

We used to have Dosas as evening snack and our cook used to make different chutneys as the side dish. So we were doing it after a long time. Some of them were keen on making this sweet dosa as well. Since Banana dosa is always made with Maida, they wanted to make it healthy by using Wheat flour. Trust me I was apprehensive as I was making it for the first time.

More than anything else, I was worried about how much batter I had to plan. My colleagues were keen on Tomato Dosa, while one was in favour of Cheese dosa, another for onion uttapam. So finally we decided on Tomato Dosa, Cheese Dosa, Onion uttapam, Banana dosa. We had a choice of chutneys as Groundnut Chutney, Coconut Chutney and Onion Tomato Chutney.

For the Cheese Dosa and Onion Uttapam, the batter was the regular one with rice. So we got about 7 kgs of batter.
For Tomato Dosa, I soaked about 2 kgs of Rice, 3 kgs of Tomatoes, 1 big Coconut, about 3/4 kg of Dry Red chilies.
For the Banana dosa, we used 2 kgs of Wheat flour, appro. 3 dozen ripe bananas, 1 & 1/2 kg Sugar, Milk as required to make the batter. Must have used about 3 litres.

On the day of actually making it, I suddenly felt that we should make the chutneys representing the Indian Flag colours. So that made me resort to using Coriander leaves for the peanut chutney.

Overall the response was amazing! On the day of making, we decided to make Podi Onion Uttapam. Trust me, everything vanished. Not to mention the chutneys. Though I was thinking I should remember to carry my camera, I forgot at the last moment and managed to click these with my colleague's phone. It's great that phones have a great cameras in built!

Sweet Wheat Banana Dosa

I am giving a scaled down recipe with 1 cup which is easy to manage.

Ingredients Needed

Wheat flour - 1 cup
Sugar - 2 -3 tsp
Ripe Banana - 1 cup mashed.
Milk - 1 - 2 cups to blend the batter
Oil / Ghee for cooking

How to make the Banana Dosa

Pulse or blend the bananas till you get a smooth puree. Add this to the wheat flour along with sugar and mix well.

Add the milk slowly to make a dropping consistency of batter. Let it sit for 10 mins.

Get a tawa heated up, make sure it is seasoned well if you are using an iron griddle. Else non stick pan works best for this.

With this batter, you got to be really quick and most case, pouring this as the regular dosa will not work.

So you will have to pour a ladleful as a circle and quickly spread it as dosa. Sprinkle oil/ghee on the sides and cook on both sides.

The batter gets sticky and the batter gets cooked very fast. So always cook over medium - low flame. I have always noticed that as we cook on, the tawa gets seasoned and you end up making good ones towards the end.

So a non stick tawa is always best for this.

Make this and enjoy!

Meanwhile I also plan to have two events announced next month, hope I will have interested folks joining me.
