Therattipaal or Kala Kand in Microwave and Khaman Dhokla for ICC

Ok, if there was a dish that I had to do in flat 5 mintues and post here, then this must really take the cake. I mean as usual I was procrastinating, ok whats new you can ask. But this time its really the last moment. I promised I will send my entry to Ramya and here I happily never got around.

So last minute everything gets done and eaten too! I clicked pictures, they are not the best I know. Will have to click new ones and upload. But forgive me, promise is a promise. And cooking this dish in microwave is the most simplicity you must know!

This has also been in my must do recipes and finally I came around doing it! Sending this to Ramya who is hosting the Microwave Easy Cooking Event, themed on Protein Rich food and I thought I would send her a milk based one!

Therattipaal or Kala Kand in Microwave

Milk - 1 cup
Sugar - 1 cup

Method to prepare:

Add both together in a microwave saft bowl and micro for 10 minutes. Stir and again micro for 2 minutes.

Make sure you use a really big bowl or else the milk will tend to spill out!

Urulakizzangu Thoran ~ from Ammini's “Grains, Greens and Grated Coconuts”!

Its one of those wonderful experiences where you don't have to work at all but enjoy the fruits of all the hard work! Yes I found myself in the receiving end of such experience and enjoyed thoroughly! This Saturday I had a fantastic time at Pratibha's place spending the day with her and Jigaysa. Both are so passionate about their work and food, that it is contagious, I must say. And when such an offer is made, would anybody say no for a fabulous lunch treat, especially if the menu is from a renowned cookbook author? Obviously not be. In return, all I had to do is click them. Wow I don't think I ever had a easier job than this!

This cooking project as we call it among 3 of us, was very simple. During one of our discussions, Pratibha mentioned their difficulties with taking pictures. She was talking passionately about cooking thalis in tribute to all those wonderful cookbooks that she reads and falls in love with. She wanted to recreate Ammini Ramachandran's Grains, Greens, and Grated Coconuts in her kitchen. So when she said all that was missing was taking pictures of the food, I naturally I jumped in offering to click for her. I can't miss out the easiest part of the whole project right! We decided we can do this project on Saturdays and this Saturday was planned! And what a day it was.

I called in Pratibha, to say I would try to catch her in action. But gosh try as I may, I may not have done it as she completed a thali containing 10 dishes by 9 am! I landed there at 11 am and saw she has completed the entire cooking and was waiting for me. She was praising the author so much that I had a pick up the book and read. And after enjoying a meal with 10 different dishes made from the book, I could very well join Pratibha in her praises! She said it was like a meditation for her, without any disturbance, she was cooking alone in the kitchen and enjoying thoroughly!

Agreeing that too much delay would prove bad, we proceeded to take the pictures. Pratibha set the dishes for me, while I got ready trying to figure out the right spot in her home. Then walked in Jigyasa. Seeing them together and working, is really shows what a great team work they have. We all had fun getting the dishes in the right angle and zoomed in. I transferred to their system and had great time figuring out which one to choose. All of them came out so well. Though I hadn't worked much in terms of cooking this fabulous lunch, I had great pleasure partaking it. It was such a great pleasure when Pratibha insisted that I should share something with my readers.

Urulakizzangu Thoran: Potatoes Panfried with Green Chilies and Coconut

Here is our hot potato salad, spiced and garnished with—what else?—fresh green chilies and coconut. It tastes good either hot or cold. As there is no mayonnaise in this dish, it stays fresh at room temperature for a whole day. A garnish of toasted dal imparts crunchiness to this salad.

Ingredients needed:

5 medium or 2 large Idaho potatoes
Salt to taste
4 fresh green chilies (serrano or Thai) (less for a milder taste)
1 cup freshly grated coconut
2 tablespoons vegetable oil
½ teaspoon mustard seeds
1 tablespoon each urad dal and chana dal
1 dried red cayenne, serrano, or Thai chili, halved
12 to 15 fresh curry leaves

Method to prepare:

Peel the potatoes, and cut them into large cubes. Place them in a heavy saucepan and pour in enough water to cover them. Add salt, and simmer for eight to ten minutes, until they are fork tender. Drain them, and set them aside.

With a mortar and pestle or in a food processor, roughly chop the green chilies. Add the grated coconut, and mix well. Heat oil in a heavy skillet, and add the mustard seeds. When the mustard seeds start sputtering, add the dal, halved red chili pepper, and curry leaves, and fry until the dal turns golden. Reduce the heat to low, add the green chilies and coconut, and fry for a minute or two. Roughly mash the cooked potatoes and add them to the pan. Stir well to combine, and panfry for another five to six minutes over low heat. Serve warm with rice and curries. This dish may also be served at room temperature as a salad.

Variation: Thinly slice a few shallots or a medium onion, panfry in two teaspoons of oil, and add to the potatoes.

Believe me, it might look very similar, yet there was something different in the taste. I may have eaten this in many numeral occasions during my visit to Kerala. But all that I can now remember is that lingering taste left from a fabulous feast!

Indian Lunch Box Recipes, Lunch Boxes for Work, Lunch Box Special, Lunch Box Series

In an attempt to record what I cook for our packed lunch, I started this Lunch Box Series. All of us at home including our 3 children carry packed lunch boxes. So it becomes a real circus every morning to get the lunch box ready by the time each of us leave.

These are what the elders in the home eat or carry, while its a different menu for the kids.

I pack hubby dear's food in a hot box, though he says it hardly remains hot by afternoon. So I try to cook food that tastes good even if cold. And on retrospect, these ended up being mostly the typical south Indian meals.

The Mango Mela ~ Part 2!

Welcome to the second edition of the Mango Mela. I am sure you still reeling with the effect of the first one. But then I can wait for ever right, so here comes the dazzling part 2, which for sure will have you all even more drooling over your screens!

So I warn you ahead, get ready to feast on some awesome creations with mangoes!

As usual there are some entries which have me in a tight spot! For the life of me, I can never think of such categories beforehand but what the heck I just decided to club them together, afterall these are so lovely! Be it a raita or a chat or just sprinkled mango pieces, these have everything listed!

For those of you who are for ever in need of a regular change, then Ramki's 10 simple no-cook mango recipes will be a great boon.

Lets us start with a raita and Cham make sure her Green mango raita is delicious enough!

Then lets move to enjoy some chat with Padma Garla's Mango Chick Pea Chat.

Or these tasty looking Mango Palya from Varsha Prabhu.



If you are those who enjoy the fruit as such, I mean raw ok, then these seasoned slices are just on offering. Priya Suresh and Shoba Shrinivasan are enjoying the bounty as such with just a little spice and salt to make it a day with these Spicy Mango Slices!

Cakes are lovely to serve, especially if you bake it yourself. Just imagining the aroma sniffing out of the oven when a cake is being baked is enough to send you heady! Lets check out some lovely concepts with Mangoes!

Three wonderful bloggers sends us their version of simple plain Mango Cakes. I had hard time choosing which was to be made right away, be it Jayasree Satish's or Kalai's or Sharmila's.

Next we have Maybelle's Mom sending us her lovely Mango Oatmeal Cookies.






While Priya Suresh ensures we have a Eggless N No Bake Mango Cheesecake

You want smaller servings? Well then Sweatha's Mango Brownie Cupcakes will be the perfect choice! And of course from the lovely Sig, who offers you a perfect Muffins flavoured with Mangoes!

If you happened to have mango jam on hand, we have Saritha coming out with an innovative idea of making a cake using it.

Finally we have two lovely Vegan creations from Sunshinemom, one Bundt Cake, the other flovoured with Orange Coconut.

Next we come to the most delicious way of eating Mangoes! Not that the other ways are not, just that when something is served chilled and as a dessert, it does tend to get so much so attention!

First on the way comes these lovely creations made with mango and cream. But it a just mixed with cream or blended with it, these love cream dishes are heavenly. Check out Priya Suresh's Eggless Mango Cream.

Followed by Shaista Malik's bowl of this Mango & Cream is no less!

Then from Andhra Kitchen comes a simple Mango Dessert and if you want Sago added to it, then check out Aqua daze's Mango Sago Desserts.

Or if you are in mood for some truffles, then Dido Divya's Chocolate ganache mango layered truffle is the prefect one for you!

Madhuram has a great fanfare for her egg less creations and this Fat Free Mango Strawberry Bread is even more exotic!

Then comes a lovely Layered Dessert Mango Special from My Experiments & Food.

I must a fool to think I won't succumb to this lovely temptation called the Mango fruit fool from Priya Narasimhan

Jellies are such delightful things and Priya Suresh seems to have got it right with her Mango Jelly.

While Shri enjoys her Mango Semifreddo.





We have two delicious entries from Sunita, which I am sure was a great hit with her kids. Her Hot and sweet mango crumble makes you want to reach out while her Mango and saffron lollies are just prefect for the season!

If there was another way of enjoying a chilled dessert its surely kulfis and we have Indrani dhar sending her Mango Kulfi while Priya Suresh flovours the mango kulfi with kesar

Pana Cottas are Italian desserts made with fruit, cream, milk and sugar. We have a greek special Pana Cotta with mangoes and yogurt! from Ivy

While Parita Shah send in her version of Mango Pannacotta

We then have some fruit salads coming our way. Be it the way Padma Srinivasagam makes

Or the way Sukanya Thalpati tops it with Jelly or how Thanu blends it with Mango base. Each of them are a treat to enjoy!

Ok as I said I became a bit more learned with this edition, knowing what Sorbet meant. These are iced fruit juices and served with different assortments. So its no wonder that Jaya Wagle being mad about mangoes makes this delicious Mango Sorbet

Then we have Preeti making a Mango Mastani for us, while Priya Suresh blends Mango N Almond for her Sorbet

Finally we have Tara topping her Sorbet with with Candied Mangoes

Next collection is all about custards, puddings, mousse and ice creams! Yea I can see so many drooling eyes out there!

Before that I am sure you would love to check out this lovely Mini Galettes with mangoes made by Aparna.

Then we have a three lovely varieties of custards starting from Kavya Naimish who made Mango Bread Balls in Custard, followed by these mango custards from Rekha and Shruthi Dinesh.

Next comes a hoard of Ice creams coming our way, all so lovely and bright yellow. Just looking at Jayasree Satish's Mango Ice cream makes me want to reach out!

Not to mention the one that Prathibha sends us or this totally bewitching treat from The Cook's Collection

Then we have a Pistachio flovoured mango ice cream from Priti and Eggless Low Fat Mango Ice Cream from Aqua daze

A Mousse is normally a creamy dessert made with whipped egg whites and heavy cream but our friends can be so very innovative! We have some lovely eggless mousse which are such a boon for people like me!

But whether I eat or not I can spend hours drooling over what Meeta creates! and this Mango Yogurt Mousse is no less!

And another lovely Mango Yogurt Mousse comes from Rekha.




Then we have two tempting entries from Priya Suresh, first her Eggless Mango Mousse followed by these Oats N Mango Mousse Delight

Ok, if you are fond of puddings, then yes you have a wide choice to choose from! Be it these plain mango flavoured puddings from Nithya or Priya's Feast or Shab Vidya or this Thai Mango Pudding from Food Fanatic. If you prefer honey, then check out this Honey Mango Pudding from Pooja S

Finally we come to last of these tantalizing array of desserts to finish it out with Shrikhand! Wow when I first tasted one, I couldn't stop with one serving. I am sure you feel the same. So check out the mango maniac that attacked Cham with this lovely Mango shrikhand

The Mango Mela ~ Part 1!

Imagine this and let me know your thoughts-- You are walking into a Mango Crop with the trees all heavy with mangoes hanging in every branch in thick bunches! What would you do?

1. Run around and enjoy the sight!
2. Try to gobble as many as you can
3. Frantically think of all the possible dishes you can make and share them on blog of course!
4. Instead of reaching out to pluck them, you resist the urge and pose beautifully for some clicks, which naturally gets shared on your blog!

Ok if you are a food blogger, you would naturally do the 3 & 4th. The first two came to mind as an optional points. I wouldn't know for sure as its been ages since I have been doing the 3 & 4 points, that I forgot how people normally behave! Infact when we visited our BIL's farmhouse, I clicked so many pictures of the yield, they were really amused. I should remember to post them sometime soon.

Coming back to the Mangoes, Mangoes have been my most favorite fruits ever. I might say the same for Banana, Chikoos and Jackfruit. But since its a mango season, lets say these are more favorite on the menu!

I can still remember those many summers spent eating just mangoes the whole day. I like mangoes best as well you guessed right, as plain whole fruit! But what does one do when there are many of them to be consumed on a day, other than coming out with different dishes. I remember making Ice creams, Mousses, Soufflés, Cakes and what not. If there is one thing that I envy my spinster days, its this!

But yes I am planning to catch up with that too shortly. So the next time you walk into a mango farm, think of these statements and if you are planning on making different dishes, am sure this Mango Mela will come to aid.

When I wanted to enjoy the season with mangoes, I sure wanted to get ideas and ideas came pouring! We have finally confirmed that we are Mango Fanatics and this surely is a Mango Mania! We have a total of 151 entries all so very different! With Priya Suresh contributing about 12 of them, followed by Kavya Naimish with 8!

Charming Chutney!

I am sure you will agree that Chutneys save us lot of headaches when we are short of ideas. With the season starting and you find yourself with loads of raw Mangoes, I am sure you will find this awesome collection very useful!

First one comes from Cham who shares her Mango Mania with us, the first one being this beautiful Mango chutney

Then we have Indrani making us a Tomato n Green Mango Chutney

I must say Kavya Naimish really had a fabulous mango season with so many mango dishes. this Koru Maagai Pacchadi being one of them.





We have Kayal Arul making a pachadi with Mango, while Shama Nagarajan shares her way of making Mango pachadi.

Then comes Notyet100 with her version of Aam Chutney which completes her meal!

And finally from me, the way Mango Chutney my mom makes it!

Then we have a bounty of mangoes in form of these condiments which are essential for a quick and fast meal!

We have two wonderful dishes from Divya Kudua.

First one is a bright sunny Jam with Mangoes that will be a great spread on a toast and the next one is a delicious Aamras that makes a great dip for puris!

We then have different methods of making Aamras, first comes Indy with her version of Aamras.

Then we have Preeti making Aamras her way.




Not to be left out on any area, Priya Suresh churns out one great looking Aamras

Next comes a lovely Marmalade made with Mangoes from Sudeshna.

If you want new ideas for topping your ice creams, then this mango syrup from Notyet100 will work out fine!

If you find yourself having a big bowl of ripe mangoes all grated and not sure what to do, then Pari Vasisht has just the right recipes for you! Check out her murabba, and Upvasacha kairi takku.

Finally from me, two quick dishes made in Microwave, one sweet and one relish both served so well during times of digress!

Lets now pickle our way to these dishes! Pickles are great dishes, they help you enjoy something over ages. And comes so handy when you run short of a chutney!

First on the list comes Jayashree with her lovely experiments with food, this time a tempting Avakka all spicy and superb!

Then we have the duo Kavitha n Gayathri sending us a bunch of their pickled mangoes. One the Mango Pickle , then two yummy thokkus, one with raw mango and the other with
sweete mango

We then have Kavya Naimish sending us some Sweet Mango Pickle. You are keen on salt and spice, then you ought to check out the lovely Mango Pickle that Lissie sent!

Next comes Notyet100 with pot of Mango Pickle



On reading the dish name as Methamba I thought it was something different but one look at the lovely picture that Preeti sent, I knew it to be a Pickle!

We then have two dishes from Saraswathi, one an Instant Manga Urugai and the other a lovely Manga Thokku

Next comes Shanthi krishnakumar with her version of a Mango Thokku! I am sure we have happy with the different versions!

Then comes Shoba Shrinivasan with a tempting treat to the southies, the Maavadu

The instant ones always works out good and you got to check out Shruthi Dinesh's version Instant Mango Pickle

Finally from me, though I haven't personally made a normal uragai, this one was a great exception to rule! Pickle with Mango n Amarnath leaves

Next we have some lovely curries and dals making our way! I love the idea of adding the raw mango pieces to the dals or the curries that we make, so these other ideas are just too good for me to try out!

First lets check out these kuzhambus, one from AnuVenkat who sends in her Mambazha Morkuzhambu.

Then we have a maavathal kulambu from Pooja Sekar. While another version of Mango Kuzhambu comes from Shoba Shrinivasan.

When all these kolambus have come will pulusu be far away? Nay check out this Mamidi Tenkala Majjiga Pulusu from Kavya Naimish.

We then have some delicious Kerala dishes coming our way, be it the Mambhazha Pulissery from Dhanya



Or the killer Maambazha Kaalan from Jayasree Satish. Who also sends in her Maanga Curry.

Then we have a Thuvaiyal from Usha Nandini.

Next we come to an array of dals made along with Mangoes. First comes Divya Kudua with Mangoes cooked in Dal. Then we have Kavya Naimish blogging her version of Mamidikaya Pappu

Along with others we have Nithya sending us her Raw Mango Dhall, which looks so pretty, of course not to miss out this Mango dal from Shama Nagarajan!

Well I want to join the zing back with a Maamidikaya Pappu.

Finally we have a delicious Mango Dal fry from Suneetha, my blog reader. I am giving her version as she has sent!

Mango Dal fry..
===========

Toor dal - 1 cup
Water - 1 1/2 cups or 2 cups
Raw mango - 1 (cut into small pieces without peeling the skin)
Onion - 1medium
turmeric - pinch
red chilli powder - 2 tbsp (add more if spicy is desired)
tamarind - little bit

For seasoning:

Mustard, cumin seeds
Curry leaves,
Red Chillies -2
garlic cloves -4 or 5
onion - few sliced thinly
oil - 3tbsp

procedure:

Clean the toor dal and soak in 1 1/2 or 2 cups of water.
add to it pieces of mango, tamarind, onion pieces, redchilli powder, turmeric
and pressure cook the dal for 4-5 whistles or till dal becomes soft.
once the pressure is done, mash the dal and keep it for seasoning.
take a vessel with 3tbsp oil and heat it,
add mustard and cumin seeds to temper,
then add thinly sliced onions, red chilies pieces, garlic cloves, curry leaves..

One pot meals are always such delights. You can whip them in jiffy and when flavoured with mangoes they make all the more interesting!

We have three different varieties of sticky rice served with ripe mango pieces. Whether these are made sticky variety or not, you got to check them out. But the entries are so delicious, am sure you will end up making it!

We then move to the delicious drinks. I was really surprised seeing so many beverages made with Mangoes!

First on cards are these delicious Smoothies, one from Deepti Srivastava blended with banana and Mangoes! and the other a plain Mango Smoothie from Kayal Arul

Lets get shaken with these milkshakes coming from Faiza Ali and Anu. The other one from me.

Then we have some lovely lassies on the offer! One from Deepti Srivastava and the other from me.

Then we have an array of Aguas frescas or chilled drinks coming our way! Aguas frescas in Spanish means "fresh cold waters". And very common to make with liquefied fruits.

First on the way is a lovely green Raw Mango Juice from Kavya Naimish, followed by a beautiful Vasantha neer comes from Lata Raja.

Next Agua Fresca comes from Meera, while the other lovely one is from Mints. Thank you girls I learnt a new one here!

Then we have two lovely drinks from Priya Suresh one a Mango N Almond Sorbet, the other a Mango N Dates Syrup Juice.

Finally we have a punch made with Strawberry and Mango from Rekha.

Soya Beans Kurma!

Soya Beans were always something I avoided! Not that I don't like it actually, its more to do with health reasons. I remember eating this when I was about 13 - 14 years, Amma made some dish with it for the first time. Shortly after eating it, I noticed my eyes were red. Dad said maybe these didn't suit me. Well I really don't know if it was these or something else. Those days I had some allergy to certain foods, which to my bliss, never got discovered. And I happily ate everything on earth, except these!

Infact few years back, the soya meat as its called the meal maker, was so popular that it was added to all vegetarian dishes. After turning a pure vegetarian, I somehow could never palate anything in resemble. The rule for me was quite simple, when you decided not to eat something, why even eat something in imitation? I don't like imitations, be it anything for that matter!

So almost many years passed without me trying to try these beans again. Infact it was for a blog event that I ended up trying tofu, of course in my mind, I couldn't replace Paneer with it. That's a different story. But these beans I always kept a safe distance. Finally I had to succumb to the peer pressure! The peer here being my Athamma as she shares the kitchen sometimes. With her finger still recovering, she isn't entering the kitchen. So I have been the reigning king, queen of the kitchen.

But when she was cooking, one fine day she decided she wanted to prepare a dish with the Soya beans. Infact went ahead bought it. Well I couldn't say no right, so just mentioning my rashes, I tasted it quite reluctantly and was happy nothing happened. Seeing that nothing happened proved quite a teaser for her. In the end, this has become a permanent addition to our list.

This rich creamy Soya Bean Kurma we had last week. This isn't exactly the way kurmas are made, but then I am never known to stick on to any particular instructions. I strongly believe recipes are emerged most times, very rarely created! I will surely make a special note of those created ones pa moi!

Soya Beans Kurma

Ingredients Needed

Dried Soya Beans - 1 cup
Onions - 2 medium
Tomatoes - 3 medium
Ginger Garlic paste - 1/2 tsp
Chili powder - 1 tsp
Coriander powder - 1 tsp
Turmeric powder a pinch
Salt to taste
Coconut Milk - 1 cup thick
Cashew Almond powder - 2 tsp
Garam Masala - 1/2 tsp
Oil - 2 tsp

Method to prepare:

Wash and soak soya beans overnight. Wash and pressure cook till soft. Depending on the brand, it might take about 3-4 whistles.

Heat a pan with oil, saute chopped onions till brown. Then add ginger garlic paste. Fry till it gets browned.

Add the chopped tomatoes, salt and turmeric. Simmer and cover for 5 mins. Remove lid and stir again. Cook till the tomatoes are soft and well cooked.

Add in the chili powder, coriander powder and simmer for 10 mins till the oil comes out of the sides.

Pour in the cooked soya beans and combine everything well. Cook in high flame for couple of mins, till the beans are well coated.

Next goes the cashew nuts, almond powder, mix well. Then add in the coconut milk.

Bring it to boil. Then add required water and simmer for 10 mins. When you find that the gravy is thick enough, you can sprinkle the garam masala, garnish with coriander leaves and remove.

The thickness of the gravy depends on what you serve it with. It can be little thin when served with Rice, else thick creamy gravy goes well with Rotis!

Note: Cashewnuts and almond powder can be easily prepared and stored. We get coconut milk from the coconut gratings that we again store. So this dish is pretty quick and gets done fast.

Food Blog List ~ By Cuisine or Specialization!

An Indian Food Blog list by Cuisine or Specialty, is what I thought was missing for a long time. Infact when I started blogging, I even created a blog specially for this purpose for collecting Indian Food blogs! Finally I was able to sit down with what I already have. But I would want this to be really comprehensive, listing as many as Indian blogs, including those interesting blogs covering Indian food possible, featuring the many cuisines that we have across the globe. Not just Indian but globally. So do help me build this.

The list need not be just on the region but also types. Like Vegan or Vegetarian. The aim is to help when you want to choose from a particular cuisine or food type. You can even want to be listed as a specific one, like there are many cuisines in Tamil Nadu, as Chettinadu, Karaikudi, to mention some. So imagine, if I want to prepare some chettinadu dishes, this way its easy for me to know who is specialized in it.

Many of the blogs already listed are specialized in different cuisines, I have put them under a specific header just for me to know where to head if I need something from a certain cuisine.

The memories of a Cooking Marathon!

Challenges are something I can rarely resist and that's exactly what I took upon myself along with my colleagues. For our company's anniversary, we were asked if we would like to cook the lunch for the entire company. We readily agreed as it was sounding so exciting and I really wanted to see if I can scale upto it! It was barely 10 days before and the cooking committee as we called ourselves, met and requested volunteers. Another dozen came forward, we met to get their thoughts on the menu. We agreed at a menu and formed teams which would handle the individual dishes. We later saw that the menu was almost the usual ones.

We had plans on including one dish from each Indian cuisine. We finally decided we would choose dishes that I will be able to scale up easily. I didn't want to risk making something entirely new, so choose the dishes from my blog naturally. While I was discussing the menu with hubby dear, on hearing the menu, he teased me saying in the end you can say for clarification visit our blog!

Initial on the list were Veg Cutlets, Paneer Butter Masala, Channa Masala, Veg Pulao, Mango Lassi along with few more dishes. So we had it changed to Assorted Veg Fries along with Paneer in the same way I make Onion Fries. Dal Makhani with Masala Puri, Coconut Puloa with Gutti Vankaya. Finally to be served with Chocolate Milkshake with Chocolate shavings, Konda's favorite!

All of us were so excited with the menu. But there were some apprehensive thoughts on the Coconut Pulao. So I even had a mock session with Coconut Pulao and Gutti Vanakaya as these are traditional Andhra dishes. Well the fact that the lunch box was wiped clean proved it to be a hit combo. The entire lunch planning was handled just like any other projects we do. But I seriously realized it requires more project management skills!

I was eternally tensed wondering if the quantity would suffice. I wrote down the list and quantity and iterated with Amma couple of times. We literally walked through the list, taking examples of how we cook and how much is needed. Amma usually never goes wrong with scaling up to huge numbers. She was happy that I have at least some of her skills. I was more elated when she finally said "very good ra, you got the quantities correct!" I felt like a 5 yr old being patted on getting the Maths right!

We had the list allocated to different people responsible for getting them together. Amma was most particular that we buy the raw peanuts and roast it at home. She infact offered to roast the Poppy seeds and Sesame seeds for the Gutti Vankaya. Since it was her specialty dish, I knew how much particular she was on getting it rightly! I had all the dry masalas all ground the previous day. I can imagine the hard work the people have to handle when they are catering to huge crowd!

The previous day I ran through the entire list of ingredients we needed. 7 Kgs of rice, 7 kgs of Atta, 20 lits of milk, 3 Hershey's Chocolate Sauce bottles, 1500 gms of Chocolates, 10 kgs of Onions, 10 kgs of Tomatoes, plus 1001 different ingredients. We had the milk boiled and sweetened the previous day and it went into the cooler. Since I was making the Brinjal Curry more like a Nune Vankaya, we had the brinjals all washed and dried.

We met the team the previous day and went through the entire process again. The team that was assigned to make the Veg fries, said they don't know how its prepared. I assured them that we can handle it. All of us planned an early start. As things would usually happen, I couldn't sleep the entire night, Peddu was having a running nose and wouldn't just sleep. As I had to prepare lunch for the boys. I was up early. But I had a great relief hearing that Konda was having a day off and I need not worry about getting her ready for school.

Hubby dear kept the boys busy while I was getting ready to leave. I thought I would slip off without the boys noticing me, but Peddu saw me and asked where I was off too. He asked if I was going to "oppice", on nodding yes, he called me close to give me a peck on the checks. Oh Sweet! I didn't need any more wishes for a sweeter success!

Making!

At office, I was happy to note the work was already on the way. By the time the entire team landed, we were in full swing. What a team work it was! Each and everybody, though some were novice in their experience, helped a lot in getting things done fast. We were dot on time as planned, which cheered us all a lot. Everybody were running around between the two rooms that were occupied.

We sent our helps up and down couple of times with last minute requests. I had a quick running around to check on each teams making the Veg fries and Masala Pooris. After okaying the proportions, the poori team rolled out a stupendous number of nearly 300+ puris. Since the team had few beginners learning, some came out as churis but on the whole those were really some awesome pooris I must say! Each and every dish had a roaring applause and everybody said they eat more than what they normally do.

Serving


The top most sold out dish was naturally the Chocolate Milkshake with Chocolate Shavings. Would you believe it was such a hit that it never got captured in any of the pictures!!! I normally beat it in a mixer, but this time added condensed milk to make it thicker which naturally enhanced the taste. In the end we used a blender to get everything set. Finally the chilled milkshake was topped with Chocolate Sauce and Chocolate Shavings. It was whipped out completely when the last few not getting their share. And most of the cooking team not even tasting it. I had to make it again in the evening. After all after working so hard for the event, they can't be missed on their dessert right!

The next one was Veg fries, with corn flour, besan, amchur and seasonings, all deep fried. There was no dispute to this being a favorite one! We added Potatoes, Okra, Onions, Baby Corns, Cauliflowers and Paneer! Of course no feast is complete without Paneer right and we had a our share of Paneer fans.


Dishes

All the dishes came out exceptionally well. Yeah except Coconut Pulao. I had a mishap with this, though we finally had a saving grace somehow. I planned to make it the usual way I do, but later realized that when cooking for more people, the method adapted has to be different! I normally roast the rice and then add water. But since the vessel was huge, it got heated up the moment it was on. and however much of coconut milk I was adding it was getting evaporated and I couldn't find water handy. Finally I managed to add enough water to get it cooked. But it wasn't the finer coconut pulao that normally gets done. But I guess with Gutti Vankaya and Dal Makhani being so exceptionally good, this sad state of Coconut Pulao was not noticed! or so I concluded.

Our colleagues made us feel proud by going in for second and some third helpings too!

Would I do it again? Yes surely its such a different experience seeing people flocking around the table and coming back for a second helping. Feeling good eating a good feast! And yes if I am lucky to have such a team doing everything that's not assigned to them, with the sole intention for the day to be a success! Some felt we were crazy but I can only remember Amma telling me that this would be such a wonderful learning experience for me! After all challenges are meant to be that right!

Mutter Paneer Masala!

Recently while on my way back to home, I saw a bicyclist peddling away very fast! It was a busy crowded road, yet he was riding quite confidently and dodging away very well. Seeing him, I was reminded of my own cycling and for a moment something hit me so hard. Will I ever cycle again? I used to be so fond of cycling and have been doing since I was 10 yrs old. I even rode to my collage, which was easily some 6+ kms in one. Yes I remember sharing my first experience with cycle. But I never thought I would completely give it up!

Wonder how such small things kindles so much thoughts and all while trying to wade my way through the traffic. Life has been pretty hectic off late, I guess its same with most of you! Some of my friends and colleagues tell me that they are just unable to handle the pressure. I wonder why life is become so hard. Was this period really so hard for our parents. I should remember to ask Amma about it. To what I remember it was kind of ok, we atleast had time to sit together and spend sometime.


Anyway today's dish was something I prepared couple of weeks back. Mutter Paneer Masala is one of those first few dishes that introduced me to the fancy North Indian dishes. Though I don't really like munching on the fresh peas, its always been a favorite of mine. Most times I remember this dish to be quite strong and pungent as served in restaurant here. I really don't know how authentic dish is supposed to be. I remember a Bengali version which was very tasty and mild. But I always liked whatever was served on my plate!

I enjoyed eating this after a long time and of course promptly forgot to click the pictures. That's why you can see that its taken in the smallest possible bowl I could find. I can imagine how much of work this would have involved!

Mutter Paneer Masala!

Ingredients Needed:

Paneer - 250 gms
Fresh Peas - 100 gms
Onions - 2 medium, pureed
Tomatoes - 1 medium pureed, 1 whole
Grated ginger - 1"
Finely chopped garlic - 2 nos
Cumin powder - 3/4 tsp
Chili powder - 1 tsp
Coriander powder - 1/2 tsp
Cashew nut powder - 2 tbsp
Cloves - 2
Cinnamon - 1"
Turmeric powder a pinch
Salt to taste
Oil - 2 tsp
Oil for frying paneer

Method to prepare:

Wash and cut paneer into cubes. Fry in oil/ghee to golden colour. Keep aside.

Heat a pan with oil, add the garlic and ginger along with cloves and cinnamon. Fry for a min, then add the onion puree. Saute well.

Next goes the tomato puree along with the fresh peas. Except cashew nut powder, add all the masalas along with salt. Simmer and cook with lid covered for 10 mins.

Remove the lid, add the roughly chopped tomatoes and mix well. Cook for 2 mins, add required water and bring to boil.

Add the cashew nut powder and simmer for 2 mins. The tomato chunks gives a good body to the gravy and chewing that gives a good taste. Finally when the gravy is thick enough, add the fried paneer. Cook in high for a min and switch off.

Serve with Roti or Naan!

Lunch Box Series : LBS#49 ~ Potato Pulao!

"You want Pokil?..a vigorous nod of the head said no and I then heard a firm aaplam" This was my conversation with Chinnu a week back. It was after knowing that Chinnu wanted to eat his friends apalam during their lunch! Till then somehow I never gave them apalams, though Friyams are an everyday dish. Konda was all excited that evening when I reached home, saying the boy's teacher asked me to send them Apalam for lunch from now. Chinnu was frivolous in demanding the apalam that was his friend's lunch box item.

Pokil, what is this you might ask. Oh that's a long story! This is the word the boys use for friyams, those golden fries made with sabudana. One fine day I remembered that Konda used to love these and got two packets, one coloured and other plain yellow ones. Both the packets were completed almost the same day. They were even fighting over which colour they want. It had green, yellow, orange, white and pink. While Konda wanted only pink, Chinnu refused to share. Peddu was content as long as he got the Pokil. Two days later, Peddu came back home asking for pokil. I didn't have a clue on what he was referring too. We had completely forgotten about the friyam episode.

None of us realized what it was but he cried a fitful for it for days. Every time he will come to the kitchen, asking for Pokil, Pokil. I open all the shelves and ask him to show me. He will have that forlorn look and pout his lips and say Pokil Amma Pokil. As if that would make me understand what he was referring too! I was feeling sad, angry and wild and lost all in one go. I know their language well but this was getting way too out of control. So whenever I thought he was going to say Pokil, I tried distracting him somehow.

Few days later, I was playing the videos I had shot of them. few weeks back Both the boys were on my lap, watching the videos. All of sudden I heard a shrill and felt Peddu becoming jubilant. He was shouting Pokil Pokil seeing the videos. I turned and saw all three of them were eating those friyams in the video! Imagine for Friyams there was so much hungama and confusion. I somehow convinced him that I would get the "Pokil" soon. Hubby dear and Athamma were laughing knowing what Pokil means.

Anyway in the end I am sending them Pokil or Aapalam on alternative days and they thoroughly enjoyed eating this Potato Puloa that I made for us last week!


Today's Lunch Box had

Potato Pulao
Tomato in coconut Milk curry
Cumin pepper Rasam
Curd Rice
Papaya

Potato Pulao!

Ingredients Needed:

Rice - 2 cups
Potatoes - 2 big
Onions - 2 medium
Tomato - 1 medium
Curds/ Yogurt - 3 tbsp
Green Chilies - 2 -3 medium
Red Chili powder - 1 tsp
Turmeric powder a pinch
Ginger Garlic paste - 1/2 tsp
Ghee - 2 tsp
Oil - 2 tsp
Salt to taste
Water - 3 & 1/2 cups
Mint leaves - 5 -6 springs
Coriander leaves for garnish

Whole spices

Cumin - 1/2 tsp
Bay leaf - 2 small
Star Anise - 1
Cardomon - 2
Cloves -2
Cinnamon - 2"
Mace - 1

Method to prepare:

Wash and soak rice for 15 - 20 minutes.

Chop onions as juliennes, tomatoes very finely. Slit green chilies in middle.

Heat a pressure cooker with ghee and oil. Once its hot, sauté all the wholes spices for 1 min.

Then add the julienne onions along with green chilies, mint leaves and fry till the onions starts sweating. Add in the ginger garlic paste. Fry till it turns brown.

Peel the potatoes while the onions are getting brown, cube them into 2" chunks. And add to the pan. Simmer and cover with the lid for the potatoes to get little soft.

Add in the chopped tomatoes along with chili powder and salt. Fry well till the tomatoes are well mashed. Simmer this for 2 mints. At this stage add the curds and drained rice. Sauté will so that the rice gets well coated.

Add water and adjust salt, combine everything well and cover with lid and pressure cook for 3 whistles.

Notes: If you are using Basmati rice, use 1: 1 ratio of rice & water. Cooking this rice in pan gives the best results. But when you are hurried on a weekday, pressure cooker gets done in 15 mins. Only have to keep an eye on the water added. So always soak rice for longer time and cook with exact measurement of water.

Roasting the Potatoes along with the onions will give a beautiful brown coating to potatoes.
